10 Healthy Lunch Recipes For Those Busy Days

Words by

The majority of us make a determined effort to improve our health by improving our diet, exercising more, going to bed earlier, and reducing alcohol use. Working through lunch is a common occurrence for many people.

It's not uncommon for people who work from home to eat anything they can get their hands on at the nearby grocery or takeout joint, to gobble it down in front of the computer screen. When work keeps you busy, and you want to develop healthier lunch habits, here are some of my favorite healthy lunch recipes.

Healthy Quinoa Salad

A cupboard must-have is quinoa, which I like for many reasons. One reason is that it's a simple item to utilize for meal prep and that it works well in a variety of dishes and snacks.  This superfood is also high in protein, making it a powerhouse of nutrition. This Quinoa Salad is also a delicious basis for other dishes.  You can change it up by incorporating salmon or chopped roast chicken to keep things interesting!

Chickpea Salad Sandwich

Meatless Mondays are no longer restricted to Mondays only! Preparing the chickpea filling for this sandwich and taking a portion of it to work each day will allow you to be vegetarian for a week. You may make a fast and nutritious meal out of some bread that you have on hand at your desk so that you don't have to spend time away from your lunch break.

Healthy Laksa with Chicken Meatballs

A massive bowl of soup for lunch may be pretty filling and fulfilling! Aside from being tasty, this Laksa with Chicken Meatballs is also packed with veggies and a spicy kick. You can meal prep this soup in large amounts ahead of time so that it is available for those hectic days when you need something quick and easy.

Spinach Artichoke Turkey Panini

If you like spinach artichoke dip, you'll enjoy this quick and straightforward panini recipe. It incorporates Greek yogurt, which will provide an additional source of protein while also complementing the tastes of the turkey and spinach in the dish. Everything comes together to form a hearty sandwich that is an excellent alternative to the classic ham sandwich that you frequently see scattered over your colleagues' desks.

Soba Noodle Salad

It is shown in this meal that salads are not monotonous. Soba noodles are created from buckwheat, which means they're high in fiber and minerals, and they also happen to be delicious. The flavors in this Soba Noodle Salad dish are fantastic, but you can always experiment with alternative items. Try grilled salmon or shredded roast chicken instead of the noodles.

Chicken Lettuce Wraps

These are popular dishes in Chinese restaurants, and you can now prepare them at home for a fast and nutritious lunch option. Huge leafy green lettuce leaves may be used as a nutrient-dense substitute for a traditional wrap. Although this recipe asks for ground chicken, you may use ground turkey, lentils, black beans, or any other protein of your choice to stuff your lettuce leaves with. Preparing the filling on a Sunday evening will ensure that you have lunch ready to go for many days.

Broccoli & Kale Green Soup

This nutritious lunch option is perfect for anybody who likes green vegetables. And if you aren't already a lover of greens, this soup will persuade you that they can be delicious. Broccoli and Kale Soup is not only tasty because of the spices used to prepare it, but it is also packed with nutrients that will offer you a health boost. This is also a dish that can be meal prepped in large amounts in advance, convenient for those hectic days.

Slow Cooker Split Pea Soup

Make this soup your first choice for quick and healthy lunch ideas if you know you're going to have a busy week. On Sunday night, let it cook in the slow cooker. Then you'll have healthy lunches for a week to keep you going! This soup is full of protein-rich peas and vegetables that are good for you. At the same time, it tastes great.

Salad Sandwich with Beetroot Hummus

Vegetables are a simple method to ensure that your lunch is nutritious. The beetroot hummus and fresh, crisp lettuce in this Salad Sandwich dish are quick and easy to prepare, but it packs a big nutritional punch. Use it in fast supper preparations as well. This sandwich will quickly become a go-to for lunchtime!

Greek-Style Lentil Soup

Make a huge pot of this Lentil Soup on your meal prep days, and it will be ready for lunch when you're short on time. Lentils are a fantastic source of fiber and protein, so this meal is both nutritious and delicious!

I hope these nutritious options inspire this week's meals! Maintaining a healthy diet doesn't have to be a burden; you can make it a straightforward option by keeping it simple.
